Flourless Chocolate Cake Recipe

8 oz Butter
8 oz Bittersweet Chocolate
¼ C Cocoa Powder
¼ t Salt
6 ea Eggs Separated
1 C Sugar

Butter the bottom and sides of a 9 in. spring form pan. Cover the bottom with parchment paper. Melt the chocolate and butter in a double boiler. Remove from the heat and add the cocoa and salt. Cool. Whisk the egg yolks and ½ cup of sugar together. Fold in the cooled chocolate. Whisk the egg whites in the kitchen aid mixer until thick. Slowly add a ½ cup of sugar. Beat to a light meringue. Gently fold the meringue into the chocolate. Pour into the prepared pan and bake until a Tester comes out clean. About 45 minutes. Cut into 10 pieces.
